One of my favorite things about summer is cold salads. They cool you down and fill you up without being heavy. This is my variation on the classic ‘macaroni salad’ w/organic orzo. Toms, red pepper, cukes, mayo (or vegannaise), a healthy splash of balsamic vinegar, dash of Himalayan salt & pepper and fresh dill.
